For those who don't have a nice meat tenderizer like yours, a fork will substitute nicely for the sharp faces on the tenderizer. A rolling pin will work well to flatten the chops. This is a technique I learned in a commercial kitchen, which could never get it together to order a good tenderizer.

I've had hardwire campers and currently a pop up, and you're still very limited in terms of spots that you can go. It's still top heavy, wide, and tall (less tall, but still 9'+)
